Commercial kitchens don't get second chances when it comes to sanitation. Health inspectors, high dish volumes, and back-to-back service rushes demand equipment that keeps up without fail. That's exactly why the right plumbing setup matters just as much as the equipment itself.

We installed a full Ecolab high-temp dishwasher setup in this commercial kitchen, and there's a lot going on here. The unit itself is built to sanitize through heat rather than relying on chemical rinse agents alone - which means the rinse cycle hits temperatures high enough to meet health code requirements without any guesswork. Getting that machine plumbed in correctly is non-negotiable. The water supply, drainage, and floor assembly all have to work together perfectly under constant pressure.

The under-unit plumbing is where a lot of the real work happened. Drain lines, the pump assembly, and the scrap catchment strainer pan all tie together in a tight footprint. Every connection has to be solid - commercial dishwashers cycle constantly during a busy service, and a slow leak or a drainage problem underneath doesn't stay small for long. We made sure everything was clean, properly supported, and ready to handle the load.

We also tied in the pre-rinse spray hose and the adjacent sink with proper faucet fixtures and water line connections. The whole wash station flows the way it should - from scraping and pre-rinsing at the sink, through the machine, and out the other side. When a kitchen is running at full speed, that workflow matters. The plumbing has to support it without slowing anything down.

This kind of work falls right in the middle of what we do - fixture installation, water line services, and making sure everything is set up to perform from day one. Whether it's a new build-out or a kitchen getting upgraded equipment, the plumbing underneath it all has to be done right the first time.
